|
Every morning at 4.30 a.m. a huge spectacle starts at Tokios Central Market. It's Tsukiji - the fish market!! Because the Japanese love to eat raw fish, it has to be in a top quality. A huge industry garantees, that only the best is offered. About 90% of the quantity for Tokios daily need passes Tsukiji. Purchasers from restaurants, hotel and fish-shops bargain to get the best tuna, which comes from all over the world.

Beside weight and size the colour of the meat is important. Here you can see, how fresh it is. The darker the red, the better the quality, the higher the price. The dark-red pieces are very, very soft and "melt" - eaten as Sushi or Sashimi - on your tongue Delicious!!! |
The auctioneer rings a bell, starts mouthing the words and within seconds, the first fish are sold. Some for the price of a small car.
|
| In another hall deep-frozen
tuna is offered for export. Just behind the gills a small piece is cut out
to judge colour. The weight is written on the back with red colour.
